Turkey vegetable stir fry with basmati rice.


This recipe has been great to make for family and the teenagers enjoyed their dinner!

Stir fry's are quick and easy to make.

Top tip - keep the vegetables crunchy and add you your suculent mouthwatering turkey.


Turkey vegetable stir fry with basmati rice


Ready in 30 minutes

Serves 1


Ingredients

basmati rice 150g

Turkey breast 100g

bean sprouts 50g

carrots 50g

baby sweet corn 50g

Red peppers 50g

mangetout 50g

onion 30g

garlic clove 1

oil 5ml

garnish:

chives

Chopped parsley

sesame seeds


Method


  1. Start by cooking the rice as instructed on your packet.

  2. While rice is cooking, prepare the vegetables and turkey breast for the stir fry. Cut all the vegetables into strips of the same size and thickness.

  3. Gently heat a teaspoon of oil in a work or a large frying pan.

  4. Add the Turkey strips and fry for 3 to 4 minutes. Add carrots next stirring for 1-2 mins then add remaining vegetables one at a time, season to taste. add splashes of water to prevent sticking and this will provide a light sauce.

  5. To finish sprinkle with chopped chives and sesame seeds

  6. Enjoy!


Tip: You can make a double batch as it's great as a lunch meal, reheats well.
