Plantain recipe

Plantains are a member of the banana family they contain more starch than a regular banana and need to be cooked before eaten. Ripen plantains are sweet and when fried the surface becomes caramelized and moreish. Fried plantain is most popular method of cooking however it can be roasted, steamed or boiled. Plantains are usually eaten as a side dish and accompany many Caribbean meals.

 

1.Gather the ingredients.

2.Peel plantains by cutting off both ends, and cutting a slit down the side of each plantain.

3.One hand holding the plantain and the other hand using a chef's knife to make a cut down the long side of the plantain


4.Remove the plantain peel by peeling it side to side rather than lengthwise. It will come off in sections. You may need to use the knife at the edge of each section to help loosen it from the flesh.

5.Cut the peeled plantains into 1/4-inch-thick slices. Diagonally is preferred because it provides a larger surface for caramelization.


6.Drizzle just enough oil into a non-stick skillet to coat the bottom of the pan, and place it on medium heat.










7.When the oil begins to shimmer, but not smoke, add plantains (work in batches). Fry for 1 1/2 minutes on one side unill golden brown , flip and cook for 1 minute on the other side.

8.Then continue frying in batches until the plantains are fried.









9.Remove plantains from the pan and drain on paper towels

10.Enjoy!
