Ingredients:
1 malted bloomer
2 eggs
1 cup mushrooms, sliced
1 red pepper, diced
1 tomato thick sliced
1 avocado, sliced
Salt and pepper to taste
Instructions:
Toast your bloomer to your desired level of crispiness.
In a frying pan, heat a small amount of oil over medium heat and cook the eggs to your desired level of doneness (sunny-side up, over-easy, etc.).
While the eggs are cooking, add the mushrooms, red pepper, and baby corn to another pan and season with salt and pepper. Sauté until the veggies are tender and the mushrooms are browned.
Slice the tomatoes and add to the frying pan with the eggs for the last minute.
Slice avocado.
